Sift the flour, mix with baking powder, soda, salt, add butter, grind with a fork into coarse crumbs, pour in kefir and mix immediately, roll half of the dough into a ball, flatten it into a flat cake, use a glass or molds to cut out 6 buns, or cut a circle into 6 triangles, repeat with the remaining dough. Place the buns on a baking sheet lined with parchment and bake for 12 minutes or until browned. If desired, the top of the buns can be greased with kefir and sprinkled with sugar.

4. Yeast buns


INGREDIENTS:

● 20-25 tbsp. sifted wheat flour,
● 1 glass of milk,
● ¼ cup vegetable oil,
● ½ glass of water,
● 1.5 tsp. dry yeast,
● ½ tsp. salt without a slide,
● sugar to taste.

PREPARATION:

Stir yeast in water, add 2 tbsp. flour, leave warm until fermentation, you can put the glass in a bowl of warm water. Turn on the oven at 200 degrees. Pour the yeast mass into a large bowl, add milk and butter, add sugar and salt, mix, then knead the dough, gradually adding flour - the dough should become soft, not sticky. Divide the dough into 50g balls, flatten into flat cakes up to 2cm thick and place on a greased sheet. Pour dry instant yeast, sugar and salt into the warmed liquid ingredients. Mix well and let sit for the yeast to start working.

Dissolve a spoonful of sugar and yeast in slightly warmed milk. Let's leave it for 20 minutes in a place without drafts, maybe even near a radiator.


Separate the yolks from the whites; we will need them for the dough.


Now you need to beat the yolks with sugar, salt and vanilla extract.

Melt and cool 100 g of butter in advance, pour it into the egg mixture.

For flavor, you can add lemon zest at this stage. Both fresh and dried will do.

During this time, the yeast will work well. If they do not form foam, then you need to install a new dough.


Add the dough and flour to the sugar mixture.


Knead the dough well. It turns out dense and does not stick to your hands at all.

To raise the mass, take a bowl and grease it with oil. Wait for the dough to rise for 1 hour.

During this time, we will begin to prepare the filling. It is better to grind the cottage cheese through a sieve to make it more homogeneous. Beat the egg with a fork.

Add sugar, vanilla, orange zest and 4 tbsp to the cottage cheese. eggs. Leave the rest for greasing the top of the buns.

The dough has risen and it’s time to start forming the donuts.


Knead it a little more in flour and divide it into 12 equal parts.


Roll each ball into a flat cake with a diameter of 15 cm. We make 4 cuts without reaching the middle, because we will put a spoonful of cottage cheese in it.

Simple recipe with apple

To pamper my family with various goodies, I specially freeze grated or sliced ​​apples in the fall. They are very convenient to use for baking in winter if there is no fresh fruit.

Apple is also suitable for all types of dough, both yeast-free and puff pastry. You can also take confiture or jam.


Ingredients:

  • 340 gr. wheat flour (2 tbsp. per 250 ml + 1 tbsp.)
  • 210 ml. milk or water
  • 35 g sugar (1.5 tbsp)
  • 4 gr. salt (1 tsp)
  • 4 gr. vanilla sugar (1 tsp)
  • 40 gr. butter, warm
  • 3 gr. dry yeast (1.5 tsp without a slide)

Apple filling:

  • 3 apples, medium size
  • 20 gr. butter
  • 50 gr. sugar (2.5 tbsp)
  • 20 gr. walnuts
  • 30 gr. wheat flour (2 tbsp)
  • 30 gr. sugar (1.5 tbsp)
  • 15 gr. butter

Pour 1 spoon of sugar and yeast into milk at room temperature and leave for 20 minutes.


Add salt, sugar and vanilla sugar to the sifted flour. Then pour in the yeast mixture.


Knead the sticky dough and add room temperature butter.

You need to knead the mixture for about 10 minutes until it becomes soft, homogeneous and stops sticking.

Place it in a greased bowl and leave for 2 hours.


Then we divide it into 10 parts.

We crush each of them and roll them into a layer.

Peel the apples and remove the seeds. Cut the fruit into slices.


Melt the butter in a frying pan and fry the pieces with sugar over medium heat until the liquid has evaporated. Mix them with walnuts.


We make two cuts in the cake along the edges and put the filling in the middle.


We close it with one edge, pinching it well.


And then the second. To prevent the filling from leaking out, the edges must be pressed.


Place the envelopes in the mold and wait for them to increase in size.

In the meantime, let's prepare the topping. To do this, mix flour, sugar and butter in a bowl. And grind everything into fine crumbs.

When the envelopes rise, brush them with beaten egg and sprinkle with crumbs.


Bake at 190 degrees for about 25 minutes.

Add cream filling

Now we get to the creamy filling. It can be anything: sour cream, cottage cheese (also called cream cheese), protein or custard.

Grease a bowl with oil and remove the mixture into it. An hour later we check how she has grown.

We form a rope from the dough and divide it into parts.

We roll each ball and grease it with soft butter. Sprinkle sugar and cinnamon on top. Lay out the raisins and roll them up.


We fasten one end and make a slot in the middle.

Leave the finished donuts to proof for 20 minutes and place in the oven.

  1. Let's prepare the dough. Heat the milk (about 100 ml) until barely warm. We break the specified amount of yeast into it and put a little sugar.
  2. In another container you need to mix the milk, the remaining sugar, 4 eggs and the butter melted over the fire. As soon as the yeast begins to bubble, you can pour it into the milk composition. Flour is added in portions. It must first be sifted so that it is saturated with oxygen.
  3. The dough should not be tight. After kneading, leave it to stand where it is warmer. As soon as the base has tripled in size, consider it ready and it’s time to start baking.
  4. Small balls of dough are greased with yolk and stand for about 15 minutes. They are baked at 190 ºС. After a maximum of a third of an hour, you can try the buns!

Cooking with kefir

Buns made from dough mixed with low-fat kefir will be fantastically tasty. The recipe is designed for approximately a couple of dozen servings.

You will need:

  • low-fat kefir – half a liter;
  • premium flour – 600 g;
  • salt;
  • sweet sand - 2 tbsp.;
  • vegetable oil – 0.5 tbsp;
  • butter – 80 g;
  • yeast – 22 g;
  • cinnamon;
  • cocoa – 0.5 tsp.

The algorithm of actions is simple:

  1. Heat kefir to 30 degrees. Add a couple of tablespoons of sugar, sunflower oil, salt and yeast to it. Mix everything and leave to rest for up to five minutes.
  2. Now add flour in fractional portions, stirring all the time. When the composition becomes elastic, cover it and set it to rise. It is important not to knead the bun - it is a tight and tough dough. If it sticks to your hands a little, coat them with vegetable oil and start making buns.
  3. For the filling, melt the butter and mix it with cinnamon, sugar, and cocoa.
  4. If the dough is liquid, you can grease the table with oil.
  5. We make a crust, distribute the filling over it in an even layer, and roll it into a tight roll. We cut it and place portions on a baking sheet.
  6. We bake at 190 ºС.

On margarine

Margarine is the most popular ingredient in baked goods. The dough with it will always be fluffy, aromatic and incredibly tasty.

Let's take:

  • 750 g flour;
  • a pack of yeast;
  • 300 ml milk;
  • Art. l. Sahara;
  • 1⁄4 kg margarine;
  • salt.

We will prepare it like this:

  1. Dissolve the yeast in a small volume of water, add sugar and leave for a quarter of an hour.
  2. Add milk, salt and flour in fractional parts to the melted margarine (250 grams for now, more in the future). Now you can add here the yeast, which has already foamed. Yeast is added not to pure margarine, but to pre-mixed margarine with flour.
  3. Add margarine and flour in portions, about 3 times at a time, stirring thoroughly all the time. The dough is kneaded until it stops sticking to your hands.
  4. Sprinkle it with flour and leave to rise. In 4 hours it needs to be knocked down a couple of times, giving the opportunity to approach again.
  5. When everything is ready, divide the dough into several parts, roll out thin flat cakes, grease them with butter and sprinkle with sugar. Roll the rolls and then cut them into small pieces. The buns can be given any shape you like.

Homemade buns should be baked until ready at 190 ºС.

Sweet buns with sour cream

Yeast dough will be even tastier if it is based on sour cream.

To execute this recipe we take:

  • Art. l. yeast;
  • 0.5 tbsp. water;
  • 3 eggs;
  • 100 g each of sour cream, butter and sugar;
  • 200 g flour.

There is enough dough for about 12 buns.

  1. Remove the butter from the refrigerator in advance so that it is soft. In the meantime, let's start preparing the dough. Dissolve the yeast in warm water and add a spoonful of sugar, leave it all for a quarter of an hour.
  2. Mix eggs, sugar, butter and sour cream together. Set aside 1 yolk and use it to brush the top of the buns.
  3. Pour the resulting mass into the dough and mix everything well. Flour should be added gradually. It is believed that the dough, kneaded in a good mood and only with your hands, will be really tasty and will work well.
  4. As soon as the dough stops sticking to the table and hands, it is ready. Leave it for a couple of hours, stirring occasionally.
  5. After this time, you can roll out the base and begin to form the buns. We cover the baking sheet with paper, make balls, grease them with sugar mixed with yolk, and leave them to rise.
  6. Bake at 190 ºС until done.

The most delicious and tender pastries

Bagels made from yeast dough are very tender.

To prepare, take:

  • half a kilo of flour;
  • 3 eggs;
  • 100 g sugar;
  • 25 g yeast;
  • a pack of butter;
  • 75 ml milk;
  • half a glass of water;
  • a little vanilla and salt to taste.

This recipe does not require a lot of time and effort:

  1. Pour the yeast into the flour. Then add eggs and water there.
  2. Pour the melted butter into the mixture, after allowing it to cool slightly.
  3. Add flour gradually and knead the dough.
  4. Roll it out and cut it into triangles. Any filling is suitable, for example, raisins or chocolate pieces.
  5. Roll small triangles with the filling into a bagel and bake at 200 ºС.

With poppy seed filling

Any yeast dough mentioned above is suitable for preparation. Let's use poppy seeds as the filling.

There is a special procedure for preparing it:

  1. Boil milk and add grains to it. Leave to swell for at least 6 hours. Better for the night. Although for the express option a couple of hours will be enough. The shell will become softer, which means it will be easier to process.
  2. Drain the milk. In another container, boil water and pour the swollen poppy seeds into it.
  3. Then leave it to cook for 40 minutes over low heat. For taste, add honey or sugar.
  4. When the poppy seed has cooled, place it in a blender and grind.

The filling is ready!

Sweet buns with raisins

Rich, sweet, fluffy buns go perfectly with raisins. This dish will be a pleasant treat for tea.

Opara:

  • milk – 150 ml;
  • yeast – 15 g;
  • spoon of sugar;
  • flour – 5 tbsp. l;
  • salt.

Dough:

  • half a kilo of flour;
  • 70 g butter;
  • 1/2 tbsp. milk;
  • 150 g sugar;
  • 2 eggs (2 whites and 1 yolk - dough, 1 yolk - grease the top of the buns);
  • 150 g raisins.

Let's get started:

  1. The dough is easy to prepare. Place sugar, yeast and salt in a container, add milk and stir until the mixture is homogeneous. You need to pour out about half a glass of milk, and add flour so that the dough is liquid. It will take about 5 spoons. The more flour and milk, the longer the dough will rise.
  2. Place the dough in the oven, preheated to 40 degrees, for about half an hour. In the meantime, beat 2 whites and 1 yolk with sugar. When a small foam appears, pour the dough into the eggs with sugar.
  3. Then cut a piece of butter into small pieces and mix the dough. Pour in the heated milk and add three cups of flour.
  4. Pour raisins directly into the dough. Mix everything with a spoon.
  5. Knead thoroughly on the table until the composition is elastic.
  6. In a bowl and in a warm place, the dough should rest for about an hour, covered with a towel on top.
  7. The finished base is divided into pieces from which balls are formed. The pieces are left for a quarter of an hour, after which they are baked at 200 ºС.

Cinnamon

In this case, you can prepare any dough, but yeast dough with milk, prepared according to the principle described above, is ideal.

Cinnamon as a filling can be prepared in two ways.

  1. The first one is really simple, because you just need to mix a couple of tablespoons of cinnamon with the same amount of sugar.
  2. The second is implemented in the same way, only the resulting composition is also combined with butter. Then the filling is not loose, but thick, like cream. It is very convenient to grease the cake and then roll it into a roll.

From dough in a bread machine

A bread maker is an ideal device for kneading dough. This is very convenient, because the technology does everything itself.

Let's prepare:

  • salt;
  • glass of water;
  • 1/4 tbsp. Sahara;
  • 1/4 vegetable oil;
  • 2 eggs;
  • 1⁄2 kg flour;
  • yeast.

In this case, everything is no more complicated than in the previous ones:

  1. Pour water into the bread machine container and add all the other ingredients one by one.
  2. We sow flour and add 450 g (we will leave 50 for rolling). Lastly, add the yeast.
  3. We put the container in the bread machine, set the dough mode and wait until everything is ready. When the bread maker has completed the task, it will make a characteristic sound.
  4. We remove the finished baking base from the container and prepare buns with any filling. If you want to use raisins, you need to pour them into a container along with the dough ingredients.

You can use jam, dried fruits, berries, etc. as filling. When everything is ready, bake the yeast dough buns in the oven.

Let's take:

  • milk – 300 ml;
  • flour – 600 g;
  • salt;
  • sugar – 100 g;
  • yeast – 2 tsp;
  • butter - 50 g, vegetable oil - 2 tbsp. l;
  • egg;
  • vanillin.

To execute this recipe we will use a food processor.

  1. Pour milk and all ingredients except butter into a bowl. Melt it separately and pour it into the almost finished dough in a neat stream.
  2. Afterwards, we will continue to mix the composition in the “Dough” mode.
  3. Then put it in a bowl, cover the top, and wait a while until it triples in size.

When the dough for sweet buns is ready, you can form small portions into balls. We grease them with yolk, let them rise again for about 15 minutes and bake at 200 degrees.

With jam

Buns with jam can be made from any of the dough described above. True, it is very difficult to use jam in its pure form. It will leak out and can ruin all the baked goods. To prevent this from happening, you can use several tricks.

Based on 1 glass of jam, you can add for thickening:

  • 2 tbsp. l. flour;
  • 1 tbsp. l. semolina;
  • 1 tsp. starch.

This way the baked goods will turn out really tasty, beautiful, airy and will look very impressive on the table.
